Davide Giambruno
Born in 1988, Davide Giambruno first became passionate about the world of cooking at a very young age, on those summer mornings when all his family met up for the “Sunday lunch”.
“The alarm buzzed early, followed by the smell of the sauce that had been cooking in the pot for several hours. I remember that my mother – says the chef – always put aside a small part of fresh pasta to engage children in the game, to keep them from getting in the way of lunch preparation.“
After a few years, Davide began his studies at the “Pietro Piazza” tourism and hospitality college in Palermo and started gaining some work experience during the summer holidays. Soon these early work experiences lead Davide Giambruno to a desire for improvement, growth and research, looking for those aromas, flavours, and sensations that only a child with a clear mind can picture so clearly.
Today Davide Giambruno is the chef of La Quercia, a restaurant within the Vallegrande Resort and a member of the Italian National Chefs Team with whom he represents the Italian cuisine all around the world.
«To achieve success in a kitchen team – says chef Giambruno – you must know the meaning of the spirit of sacrifice, the idea of team and sharing, but above all, a chef must know how to be less of a dictator and more of an influencer».
Davide Giambruno’s cooking philosophy is based on tradition, local products that are characteristic of a nation as strong as ours, enriching it all with modern techniques and giving an appearance to the dish that increases palatability, with fresh and harmonious colours.
